Green Curry with it’s addictive sweet and rich pre-made sauce, that finishes with a mild kick. You can always make your own curry, but this saves time, and it is out of this world delicious!

- 5 lbs. Fresh mussels from Fox Island Oyster Co.
- 2 Jars Green Curry Sauce- (We are obsessed with Seattle’s Thai Fusions green curry sauce). Substitute your local supermarket green curry, just make sure it has coconut milk inside.
- 1 stick Salted Butter
- 1 Onion
- 4 cloves Garlic
- Optional: Fresh herbs (cilantro, chives, or basil)
- Optional: chili for heat

Step-by-Step Instructions
- Cleaning the Mussels
- For Mussels: Make sure to scrub shells and remove any remaining beards from shells and then rinse in colander.
- Preparing the Base
- Heat and melt butter
- Add minced onion, sautéing until tender (About 7-10 minutes).
- Add garlic and sauté until fragrant.
- Making the Curry Sauce
- Add 2 jars of Thai Fusions green curry sauce and heat to a low simmer, stirring to combine.
- Cooking the Shellfish:
- Add cleaned mussels and drained clams to the pan. If cooking on the oven cover and cook until they open (about 7-9 minutes).
- If cooking on the BBQ- close the lid and cook until they open (about 10 minutes).
- Remember to remove and discard any clams or mussels that do not open in the pot.
- Finishing Touches
- Stir in fresh herbs and a squeeze of lime for brightness.
- Serving
- Serve up a heaping bowl immediately and pair with crusty bread or steamed rice to soak up all that good sauce. Be sure to share with friends and family!
